I'd recommend learning Fusion 360. It's free. Has very powerful CAM built right in. I'm also a Blender user. I wouldn't dream of using it for CNC anything.
Head over to youtube and search for nyc cnc. Lots of videos pertaining to Fusion and CAM.

I second an IP cam. I have an inexpensive TrendNet camera that I plug in from time to time when needed. It's wireless. I use my cell phone (android) and an IP cam app that lets me view what's going on. Pretty simple stuff.

I would have completely passed on MeshCam. I don't like it at all. It was a waste of my money. I think Fusion 360/HSMWorks Express is where it's at for free and Vectric V-Carve for $$. I can do everything I want with all 3 of those apps.

Yeah, I'm kind of interested too. 1/8 or 1/4 would be fine. I do tons if engraving work on aluminum. I sometimes run my dial indicator across my cutting surface to make sure it's flat within a few thousandths first. Always wondered about other probes other than my conductive one.
