As Will stated trying a downcut bit may help. When doing fine work there is a noticeable difference in cut quality depending upon the bit manufacturer. I noticed a difference in cutting hardwoods immediately. Try Amana or Onsurd. They have a big selection of CNC bits just for that material and great...

From my experience atonwa has it right. Depending on the desired results, Sealing, a couple of finish coats, then cutting the vcarve, followed by staining the v carved letters, and then promptly wiping the stain off the finished areas works great. I cut a lot of .25" -.75" oak, cherry, maple, and poplar. I use .250 2 flute bits flat and ball nose, and .125 ball nose. Insert V bits from Amana (Toolstoday) and a precisebits collets and nuts.
