I have a Prusa i3 with a single extruder. It has an 8"x8"x8" (200 mm x 200 mm x 200mm) print volume. If you add in a second extruder, you will lose whatever distance that exists between the nozzles. I should get 8"x8"x8" using a dual extruder or very close to it.

The limitation is the 16x16" cutting volume. The main plate just about maxes that out.

The steel cross frame creates a lip just under 1/4". I think 3/8" would be perfect and allow for a slot to be cut and slip over the steel frame.

Wouldn't need a 4x8 sheet tho. The cutting board option is the best value but alittle thick for my application but can be trammed down as needed
