Wait! Make the assembly part of the class curriculum. Doing the assembly as a class is a very fun way to learn. Figure it takes 16 hours. The class can build multiple sub-assemblies simultaneously in a few classes. Then start the real class.

The reset button won't wipe out grbl. The reset is simply does a restart of the Arduino. Since you got it working once, i'd suggest simply to power down everything and unplug the USB cable from the PC (to power down Arduino). Except for the spindle, power up everything. Try to jog again. If it works...
