That setting has changed too, I believe the max used to be 256. You will likely run into other issues with using stock grbl as the software. For what it's worth, I've been using Universal GCode Sender with a touch probe. I created a macro to probe and set Z with the offset thickness of my touch plate. This works great for setting Z after a tool change.

I think there's a bit of confusion here. The directions linked by OP don't refer to Will's Universal GCode Sender. Based on the directions, he's using GrblHoming, which is downloaded via git.
