I would like to add a waste board with dimensions of 500mm x 1000mm (my work table is 2' x 4'). Since I'm an FNG I could use some expertise/help to get this done. Any help would be appreciated.

Everything we have on this is here:
https://www.shapeoko.com/wiki/index.php/Scaling_Up
I'm afraid that the Shapeoko has pretty much moved on to v3 as sold by Carbide 3D and its Inventables w/ the X-Carve which are carrying on w/ the SO2 --- most of the differences are cosmetic, but you should be able to get parts from them to upgrade your machine. If you have some specific difficulty, let us know and we''ll do our best to help.

Re: Shapeoko 2 500mm x 1000mm waste board
med,
There are still a number of use that hang out here that have Shapeoko2's or have had a lot of experience with them. Don't let will's "Official" move to S3 scare you off. The Party line might be the new shiny hotness..... but there are a number of rebels here that will come to the aid of a fellow S2 owner/ user. So Keep posting Q's if you have them. A lot of the basic FNG Q's are universal across CNC machines too.
Welcome !

What I say is official only when it's through support@carbide3d.com --- my note was meant as an acceptance of the dramatically lessened traffic/discussion here --- certainly a Shapeoko 2 is still a great machine, and extended along the Y-axis, doesn't lose necessarily in rigidity.

Yes, plenty of S2 owners still here, it's a shame the community got split with the advent of the S3.
To answer the OP's question, easiest thing do do is a slab of mdf, just make sure it's big enough to screw the frame down to. The cuts don't have to be neat so any kind of saw will do, you could also get a home store to cut for you. Screw down your workpiece with a few drywall screws or create a jig with some clamps on it and screw that down. There are more thoughtful ideas on the wiki but that will get you started if you're at zero.

Is the ShapeOko going to be fixed to that worktable?
If not, you will need to build a torsion box or other rigid structure to mount the wasteboard and SO2 on top of, because at the size you're scaling it to, there's a real danger of the wasteboard getting bent or twisted.
