Homing switches.... workflow

So I am about to install 3 switches, for x, y, z... to use as homing switches... I totally get the concept. But I don't understand how to then use the home position to determine the proper z depth for the workpiece? I see some videos showing using a metal contact plate to then set Z zero. But I assume there is a "decent" workflow using homing switches, and also getting the z depth right. Since most users seem to be using their Shapeoko without the electrically measured contact plate.

Is there a good tutorial somewhere showing both how to use homing switches to set the machine 0,0,0 and then cut the part? I see several users setting the homing position. But i don't see the next step using this position relative to the actual workpiece?
