I'd suggest always using a razor sharp new HSS cutter for the finishing pass if it is a pro finish you want on the piece. Use carbide up until the finishing pass.
Best of both worlds.
(Note on 'sharp': If you have a sharp chisel it will readily cut a clean line in one pass into any wood. It cuts easily, with hand pressure in soft woods. A slightly blunt chisel simply won't without a mallet behind it, and a really blunt one will smear the wood. Test your cutter in the same way - try it in your hand cutting the target wood. If it won't cut nicely, it isn't sharp. )
